Our Farmstead Cheese is made from milk produced on our farm and supplemented with organic milk delivered daily from Mesman Farm here in Skagit County. The milk from these two herds is produced with care and attention given to ensure the purity, quality, and flavor of the milk as well as humane treatment of the animals. As Artisan, Specialty Cheesemakers our cheese is hand-crafted, with limited production in small batches and detailed attention to quality-conscious traditional cheesemaking methods. Our cheese is ripened naturally, with emphasis on development of characteristic flavor and texture, not using any shortcuts or techniques to increase shelf life at the expense of quality. Our dairy products are all made from organic whole milk, just as it comes from the cows.
Fresh Cheeses
Our fresh cheeses are sold immediately after manufacture. They are available in Mama wheels (about 2 lbs), Baby wheels (about 1 lb), and in smaller cuts.
All of these cheeses are perishable, short shelf life cheeses.
Ladysmith
Designed and invented by Roger Wechsler in January of 2009. Its light flavor is unmatched by any other cheese. Fresh, soft cow milk cheese. Smooth, mellow, moist, slightly acidic. 1st Place Award by the American Cheese Society in the Fresh Unripened Cow Milk Cheese Category.
Ladysmtih with Chive
Fresh, with the prominent flavor of fresh chives. An American Cheese Society award winner.
Ladysmith with Arugala
Fresh subtle flavor, lightly peppery flavor from the arugula. Calendula flower petals, added seasonally make it a most attractive cheese on the cheeseboard.
Aged Ladysmith
When we age our Ladysmith after a few weeks it develops a wonderful creamy texture inside a golden edible rind. Melts well; pairs nicely with almost anything you can think of. An American Cheese Society award winner. Our Aged Ladysmith holds that soft creaminess best in our Papa wheels (5+ pounds). Also available in mama wheels, a bit less than two pounds and baby wheels less than one pound. These smaller wheels are a bit firmer than the larger ones. When aged for longer, we get our Dry Aged Ladysmith, which is great for slicing or grating.
Queso Fresco
A traditional Latin American style fresh cheese. It is a little firmer than the Ladysmith with a different flavor.
Queso Seco
The aged version of our Queso Fresco. Nice for slicing or grating.
Queso Jalapeño
Our Queso Fresco with fresh jalapeños. An American Cheese Society award winner.
Queso Diablo
Spicy! This delectable cheese is filled with Habaneros and Jalapeños. Did we mention it’s hot?
Mozzarella
Mozzarella is sold in a brine with whey to ensure a texture that is delicate, soft, and moist. Great for salads, and cooking/baking/melting.
Vache
A wonderful cow’s milk spreadable cheese that is so rich with a little tartness. Great with smoked salmon, mixed with any fruit, or on a cracker with pepper jelly. A fantastic substitute for cream cheese with less fat.
Farmer Cheese
Our Farmer Cheese an un-pressed version of our Ladysmith. A little like a moist cottage cheese, available in 9 oz. retail or larger food service sizes. Also available with Chives.
Feta
Feta is a traditional Greek sheep or goat cheese; ours is made with our cow’s milk. It is flavorful, salty, and slices and crumbles nicely. Feta is available vacuum packed in retail sizes and 5 lb. bulk packs. It can be held fine for several months.
Ricotta
Ricotta is made with whey and whole milk for a smooth, creamy cheese great for spreading, stuffing and whey more. Available in 12 oz tubs and larger food service sizes.
Curds
Curds or squeaky cheese as we call them, are cheddar cheese curds tossed with salt and packed fresh. Delicious and habit forming (you’ve been warned!). You can find these at our Farm Shop and select locations around the area. Available in 8 oz tubs and larger food service sizes.
Aged Cheeses
We age cheese anywhere from 2 months to 10 years and more!
Gouda
Our Goudas are ready in about 2 months, but we can age them for ten years or more. Vacuum sealed, they will keep indefinitely.
Natural Rind Gouda
Natural Rind Gouda is air dried to develop a hard, edible rind, a denser texture, and wonderful rich flavor. It is not wrapped in plastic and is aged from 2 months up to about 6 months.
Flavored Goudas
Available in Cumin, Caraway, Nettle, Chili-Chive-Onion, and Herb (parsley, chives, garlic).
Cheddar
Cheddar is ready in 2 or 3 months, and ages well, just as long as the Goudas. Available in mild, medium, sharp, and extra sharp. Like the Gouda, the longer it is aged, the stronger and more pronounced the flavor.
Chipotle Cheddar
Made with organic chipotle powder. Smooth, smokey, and mildly spicy.
