Ingredients
6 tablespoons unsalted butter, brought up to room temperature, plus extra for greasing.
1 cup sugar
2 or 3 very ripe bananas, coarsely mashed (about 1 1/2 cups)
3 large eggs, lightly beaten
1/2 cup Samish Bay Yogurt
1 3/4 cup all purpose flour, plus extra for flouring
1/4 cup flax seed meal
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/2 teaspoon salt
3/4 cup coarsely chopped walnuts, pecans or hazelnuts
To Create:
Preheat oven to 350 degrees Fahrenheit. Grease and lightly flour a 9×5 inch loaf pan.
Beat butter and sugar in a mixer until creamy (about one minute). Add the eggs one at a time and then add the bananas and beat until smooth. Add yogurt and beat just a few strokes.
In a separate bowl combine flour, baking soda, baking powder, nutmeg, salt and nuts. Add dry ingredients to butter & banana mixture and beat until just mixed and scrape the sides of the bowl. Batter should be lumpy.
Pour batter into loaf pan (it should only be 2/3 full). Bake for 55-60 minutes or until loaf is golden brown. Let cool for five minutes before removing from loaf pan to cool. Slice and spread with Samish Bay Vache.
